This post will hopefully be mostly photos from yesterday and today. We spent yesterday at a cooking class with Rosa Jackson, shopping for and preparing a multicourse lunch. Rosa took us to her favorite vendors in the huge outdoor market, pointed out unusual and unique to this part of France spices and herbs, some of which we purchased to take back to the US with us. google “tonka beans” for information about a nutmeg-like bean that we grated into a custard for Strawberries Gratinee for dessert.
We roasted a whole fish that was enrobe in a salt crust…coarse salt held together with egg whites that we whisked up a bit to froth them. It was an entertaining experience wrapping that fish in salt and in the end, the moist flavor was delicious.

Loved the photos of YOU and the fish. The sea salt really look coarse. Have never tired cooking anything but baked potatoes with coarse sea salt. As I recall the potatoes were not a hit, but I’m not known for my cooking.

Our class was fun and going back to the vendors where we shopped with Rosa has been even more fun. They remember us and are always so cordial and friendly. Love that about the people in this region.

Ugly fish…my daughter said it looked like a suckling pig. Recipe says sea bass. This fish’s name started with a “G” but we cannot remember the word. IT was delicious.

Yes, Andrea…the Artichaut Violet. Will send you recipe later. Rosa is emailing us the recipes she used that were not already printed. Here in Nice until the 4th of May and then up to Paris for a couple more weeks. Are you and Steve at home in Provence?

Food looks delicious! I ate leftovers taken out of the freezer when the painter accidentally unplugged my frig. Would rather have eaten with you!
